Keto cauliflower soup

Cauliflower is one of the most sought after vegetables for the keto diet. Like all top vegetables, this vegetable is low in carbohydrates.

Ingredients

  1. Place the pot over high heat.
  2. Add butter and garlic and sauté for 3 minutes.
  3. Add cauliflower and stir. Fry for 2 minutes.
  4. Add cream, chicken stock and pepper. When soup comes to a boil, reduce heat and simmer for 15-20 minutes, until cauliflower is tender.
  5. While the cauliflower is cooking, cook the bacon. Add bacon to a skillet and place over medium heat. Fry the bacon for 10-15 minutes, until the bacon is crispy. Set the cooked bacon aside.
  6. Using a blender, combine the soup into a smooth puree.
  7. Add bacon and parmesan to soup, stir well.
  8. Pour into bowls and serve.
