Lemon desserts are tender and invigorating. The characteristic sourness gives the dessert lightness and sophistication. And when there are about 2 g of carbohydrates in a serving of dessert, then it is simply indecent to refuse such.

  1. Preheat oven to 180 degrees
  2. First, let's make the base: melt the butter and mix it with almond flour, salt and sweetener
  3. Spread the resulting mass over a baking sheet (I had a small form 16 * 16 cm), about 1 cm thick
  4. Bake the base for about 13 minutes in the oven
  5. In the meantime, let's make the filling. Everything is also elementary simple
  6. Whisk eggs with salt, sweetener, vanilla, almond flour and melted butter (not hot!). Rub the zest of one lemon into the resulting mass, and then cut it in half and squeeze out all the juice. Mix it all again
  7. As the base is baked, remove it, cover with lemon filling, distribute evenly and again in the oven for 15 minutes.
  8. After 15 minutes have passed, remove the finished cake from the oven, cool and leave in the refrigerator for a couple of hours
  9. You can serve it straight or with whipped cream.
