  1. In a bowl, combine coconut flour, baking soda, erythritol, baking powder, salt, and xanthan gum.
  2. In a deep bowl, combine the buttermilk, melted butter and egg.
  3. Mix dry and wet ingredients until they are a single mass. The pancake dough should be thick.
  4. Preheat a skillet, add cooking oil.
  5. Use a large spoon to spread the dough into the skillet and smooth with a spatula.
  6. Fry the pancake over medium heat for 3-4 minutes. When the pancakes will easily lag behind the pan, you can turn over and fry for another 1-2 minutes, until golden brown.
