Lean coffee muffins with prunes

Lenten pastries with dried fruits for tea are simple, but at the same time tasty and fragrant. :) Recommend. Prunes in this recipe are very out of place.

Ingredients

  1. Instant coffee pour 250 ml of warm water and mix. Add honey.
  2. Add sugar and salt. Mix everything well. Add semolina and vegetable oil.
  3. Mix everything well. Leave for 10 minutes for semolina to swell.
  4. Turn on the oven and preheat to 180 degrees.
  5. Toast the walnuts in a dry frying pan over medium heat until fragrant, stirring occasionally, 4-5 minutes.
  6. Then chop the nuts with a knife.
  7. Rinse the prunes, dry and cut into cubes.
  8. Sift flour and mix with baking powder.
  9. Mix flour with coffee mixture.
  10. Mix everything well. The dough should be medium in thickness, like sour cream.
  11. Add prepared nuts and dried fruits to the dough.
  12. Mix everything well.
  13. If you have metal molds for baking cupcakes, they need to be greased with vegetable oil. And paper or silicone molds do not need to be lubricated.
  14. Divide the dough into molds, filling them no more than 2/3.
  15. Put the molds with the dough on a baking sheet.
  16. Place it in the oven. Bake cupcakes until done, 20-25 minutes.
