Lean Honey Raisin Muffins

Honey muffins according to this recipe are prepared without butter, eggs and milk. If I hadn’t cooked them myself, I would never have believed that muffins are lean, and you need a minimum of the simplest ingredients to make them! The muffins are very, very tasty, soft, well rise. An additive to the dough is raisins, which can be replaced or supplemented with pieces of dried apricots or prunes.

  1. Prepare the necessary ingredients.
  2. Honey needs liquid.
  3. Boil water (150 ml) in any convenient way and cool to room temperature.
  4. Turn on the oven to heat up to 180 degrees.
  5. Pour boiled water at room temperature into a bowl. Add liquid honey, sunflower oil, sugar and a pinch of salt.
  6. Stir.
  7. Set aside a teaspoon of flour for rolling the raisins, mix the rest of the flour with soda and sift into a bowl with honey liquid.
  8. Knead a homogeneous dough.
  9. Rinse raisins, dry on a paper towel. Then roll in the flour that was left for this purpose. Add raisins to the dough.
  10. Use a spoon to stir the raisins into the batter.
  11. Divide the dough into a plate for 8 muffins, filling each cell 2/3 of the volume (I have a plate for 6 muffins and two molds).
  12. Bake the honey muffins in a preheated oven at 180 degrees for 20-25 minutes (I baked for 22 minutes).
  13. Remove the finished muffins from the molds and cool.
  14. Sprinkle cooled muffins with powdered sugar, if desired.
  15. Lean honey muffins are ready to serve.
