  1. Transfer the butter to a bowl and melt in the microwave at 800 W for 1 minute.
  2. Let the oil cool down.
  3. When the butter has cooled, add sugar to it and beat in the egg.
  4. Stir with a whisk until smooth.
  5. Combine flour with baking powder and sift into liquid base. Add poppy here.
  6. Wash the lemon, wipe dry. Remove the zest from half a lemon using a fine grater. Also squeeze 1 tbsp. a spoonful of lemon juice. Add juice and zest to the rest of the ingredients.
  7. Stir with a whisk. The dough will be quite thick.
  8. Divide the dough among the cups, taking up about half the volume of each of them. I used 3 cups of 230 ml.
  9. Cook cupcakes in the microwave at 800W for 4 minutes.
  10. Remove cupcakes from microwave and sprinkle with powdered sugar.
  11. Lemon cupcakes with poppy seeds are ready.
  12. Cupcakes can be served directly in cups warm or cold.
