Lenten honey cake with prunes and spices is a hearty and tasty pastry from affordable products. The addition of honey, cinnamon and strong black tea with bergamot gives the cake a spicy taste, appetizing aroma and seductive caramel color.

  1. Brew strong black tea with bergamot. To do this, pour the tea leaves with boiling water and let the drink brew for several minutes. Strain the brewed tea through a sieve.
  2. Combine vegetable oil, honey and sugar in a heavy bottomed saucepan. On low heat, stirring constantly, warm the mixture until the sugar dissolves and a homogeneous mass is obtained. It is not necessary to bring the mixture to an active boil.
  3. Remove the honey mixture from the heat. Add hot tea and soda. Leave the mixture for 2-3 minutes to cool down a bit.
  4. Soda will react - the mass will foam and brighten.
  5. Turn on the oven to preheat to 150 degrees.
  6. Meanwhile, cut the pitted prunes into large pieces. Add 10 g of wheat flour to the chopped prunes and mix everything well so that each piece is covered with flour.
  7. Add ground ginger and cinnamon to the mixture of liquid ingredients.
  8. Sift the remaining 140 g of wheat flour. In small portions, add flour to the rest of the ingredients and mix the dough so that there are no lumps left.
  9. Add floured prunes to the dough.
  10. Line a baking dish with parchment paper or grease with a thin layer of vegetable oil. I use a 25 x 11 x 7.5 cm pan, but for this cake, a smaller one works even better - the cake will be taller.
  11. Pour the dough into the prepared mold.
  12. Place the mold in the preheated oven and bake the Lean Honey Plum Cake for 50-60 minutes. Check readiness by piercing the cake with a wooden skewer. If the skewer comes out clean and dry, the cake is ready.
  13. Lenten honey cake with prunes, cinnamon and ginger is ready. Let the cake cool in the pan and sprinkle with powdered sugar if desired before serving.
