Lenten muffins with honey and bananas

Cute lean muffins without eggs, milk or butter. But with honey and banana slices! A beautiful, uncomplicated treat and a great addition to your morning tea or coffee!

  1. Prepare food.
  2. Lenten muffins with honey and bananas are prepared quite quickly, so it is better to turn on the oven in advance to warm up to a temperature of 180 degrees.
  3. In a deep bowl, combine honey, vegetable oil and 1/3 of the water (about 60-70 ml).
  4. Add sugar and salt, mix well.
  5. Pour in flour and baking powder.
  6. Stir well until smooth. The mass will be very thick.
  7. Whisking constantly, gradually pour in the remaining water to achieve the desired dough density. The consistency of the dough should be similar to the classic dough for cupcakes - not too liquid and drain from the whisk with a "ribbon".
  8. Place a paper mold in each cupcake pan. If there are no such paper molds, it is better to grease each cell with butter or vegetable oil, so it will be easier to remove them later.
  9. Then fill each cell with dough by about 2/3.
  10. Peel the banana and cut into slices about 1 cm thick.
  11. Place a slice of banana in each cell with the dough. Send the cupcakes to the oven, preheated to 180 degrees, for about 20-25 minutes.
  12. Let the prepared lean cupcakes with honey and bananas cool slightly and serve.
