  1. Fill the legs with water, bring to a boil, remove the foam, add the celery stalk, dried roots, hot peppers, a bouquet of Garni, and cook over medium heat for 2 hours. Add salt in about an hour.

  4. Free the peppers from the seeds and partitions, also cut them into cubes.
  5. While the broth is cooking, cook the roast. Heat the oil in a frying pan, and sauté the onions until they change color.
  6. Add carrots, stir, and fry for 3 minutes.
  7. Add pepper, stir, and fry for a couple of minutes.
  8. Then add a tablespoon of broth, and a couple of bundles of salt, stir, reduce the heat under the pan to a minimum, and cover and simmer for 15 minutes.
  9. After two hours, remove the turkey from the broth.
  10. Strain the broth into another pan, put it back on the stove, and bring it to a boil.
  11. Send lentils in the broth, reduce heat to medium and cook for 40 minutes.
  12. Meanwhile, remove the meat from the bones.
  13. Five minutes before the end of cooking, send the soup to roast, and return the meat.
  14. Bring to a boil, turn off the stove, and allow the soup to infuse a bit.
  15. When serving, you can decorate with cilantro leaves - by the way, its taste will fit very well into the overall taste of this dish. Bon appetit!
