Mashed potato and tomato casserole

A simple casserole cooked exclusively in the microwave.

Ingredients

  1. Peel the potatoes, wash and chop finely. Fill with water, salt, cover and put in the microwave for 15 minutes (at a power of 850 watts).
  2. When the potatoes are cooked, drain the water. Add butter and spices (I have black pepper and coriander).
  3. Mash the mashed potatoes. This should be done quickly while it is hot.
  4. Chop the dill. Set aside a quarter of the chopped dill for garnish.
  5. Add dill to potatoes and stir. Set potatoes aside.
  6. Peel, wash and chop the onion.
  7. Stir the onion with 1 tbsp. a spoonful of vegetable oil and put in the microwave for 2-2.5 minutes (power - 850). If you rarely microwave, be careful not to burn the onions.
  8. Cut the tomatoes into slices.
  9. Beat the egg.
  10. Mix the egg with the cooled puree.
  11. A baking dish (one that can be used in a microwave oven) is well greased with butter or vegetable oil. Put half of the puree and smooth it out.
  12. Put onion steamed in butter on mashed potatoes.
  13. Above - tomato rings.
  14. If there is a little mashed potatoes, you can put the tomatoes in the first layer on the bottom of the mold.
  15. Put the remaining puree on top of the tomatoes. Level it well.
  16. Grease the surface of the casserole with vegetable oil. Cook the mashed potato casserole in the microwave for 7 minutes at 850 watts.
  17. Remove the prepared mashed potato casserole, sprinkle with herbs and serve.
