The wild garlic season is short - it pleases us for about three weeks in the spring. Therefore, you need to have time to get the most out of this tasty and vitamin-rich plant. I suggest you prepare a mashed potato soup with bacon and onions, a green note and a bright taste to which freshly cut wild garlic adds.

Ingredients

Directions

  1. Peel the potatoes and onions. Cut the onion into 2 parts - we will cook one with potatoes, and the second part will go to frying. Coarsely chop the potatoes.
  2. Place the potatoes and half of the onion in a saucepan, pour 800 ml of water and put on fire. Bring to a boil, reduce heat, and simmer for about 20 minutes, until potatoes are tender.
  3. Cut the other half of the onion into small cubes.
  4. Sort the wild garlic stems and free them from the upper white film.
  5. Heat vegetable oil in a frying pan, put onions and fry for 3-4 minutes, until transparent.
  6. Add wild garlic stems and fry for another 1-2 minutes, until soft.
  7. Remove skillet from heat.
  8. Pour the broth from the potatoes into a cup or saucepan. Use a hand blender to beat the mashed potatoes and onions.
  9. Add the contents of the skillet to the pan and blend again with a blender.
  10. Heat the cream. Pour cream and 300-400 ml of broth into a saucepan with potatoes. Adjust the consistency of the soup to your liking by adding a potato broth.
  11. Pour black pepper and salt into the soup, stir and bring to a boil.
  12. Puree soup with potatoes and wild garlic is ready. It remains to prepare a meat supplement for flavor and additional satiety.
  13. Fry the bacon in a dry skillet for 1-2 minutes.
  14. Flip the bacon over and fry for another 1 minute.
  15. So fry all the bacon strips.
  16. Pour a few soup ladles into a serving bowl, add 2-3 strips of bacon. The soup is ready to serve.
  17. For brightness, you can add fresh dill or parsley, but the delicate green color of the soup is so beautiful that I did not want to dilute it with anything else.
  18. Potato soup is hearty, appetizing, easy and quick to prepare. Bacon can be sliced into soup or garnished with whole slices.
  19. Be sure to make this soup! Ramsons are the first spring vitamins on your plate.
