Rinse the rice, add cold water and leave for 2 hours.
Peel the onion and cut into quarters.
Heat vegetable oil in a frying pan (you can add a tablespoon of butter to it), put onions and salt a little.
Fry the onions over low heat until soft, remove from heat and let cool.
Wash the chicken fillet, dry it, cut into cubes, place in a blender bowl.
And grind.
Add fried onions to the minced meat.
Add diced chilled butter.
And whisk everything together in a blender.
Season to taste with salt and freshly ground pepper.
Put the resulting minced meat in the refrigerator for an hour (or a little longer), so that the mass becomes denser, and meatballs can be formed from it.
With hands dipped in water, collect a little chilled minced meat and form meatballs.
Drain the water from the rice, dry the rice.
Roll meatballs in rice.
Cover the steamer with a sheet of parchment and put chicken meatballs on it at some distance from each other, because the rice will open during the cooking process.
Steam for about 20 minutes.
Carefully remove the prepared meatballs from the steamer, being careful not to crumble the rice "needles".
Serve on lettuce with vegetables or other garnish.
