A cold, aromatic melon gazpacho is a great soup for a hot day. The combination of sweet, spicy and salty is wonderful. You can serve gazpacho in cups or even glasses. Imagine and enjoy!

  1. Peel and seed the melon. Cut into cubes. Peel the onion. Add hot peppers or chili as desired. I like spicy things, so I add chili with seeds to gazpacho.
  2. Whisk all ingredients except bacon and mint leaves with a blender.
  3. Fry the bacon until dry in a frying pan.
  4. Pour gazpacho into glasses or glasses, garnish with rinsed fresh mint leaves and bacon. If desired, gazpacho tz melons can be cooled before serving. Bon Appetit!
