  3. With the help of two spoons, lay out the blanks for medium-sized cakes on a baking sheet lined with baking paper.
  4. We bake the meringue at a temperature of 110-120 degrees Celsius for approximately 1 hour and 15 minutes. Meringue cakes should be dry and light. Remove the finished meringues from the oven and let cool.
  5. Let's prepare the cream. For Iceberg cake, you can use any cream or butter cream. In this recipe, we will use a combined butter cream: Charlotte cream with the addition of condensed milk. Prepare cream Charlotte. Pour 200 milliliters of milk into a saucepan, add 150 grams of sugar, put on a small fire and stir until the sugar is completely dissolved. Bring to a boil.
  6. In a separate bowl, mix four yolks well and, continuing to mix, pour hot milk syrup in a thin stream.
  7. We return the mixture to the saucepan, put on a small fire and cook with constant stirring until thickened. Pour the cream into a bowl and leave to cool to room temperature.
  8. In the bowl of a mixer at high speed, beat 200 grams of soft butter until white. And, without stopping beating, gradually add the cooked cream and 100 grams of condensed milk.
  9. Beat until you get a fluffy, but not very dense cream.
  10. Lubricate each meringue cake with cream and lay on a dish in layers in the form of a cone. Sprinkle each layer with toasted chopped nuts.
  11. Cake "Iceberg" is a very beautiful light cake, which does not include flour.
