Minestrone is the most popular soup made in Italy. It is so associated with first courses that outside the country, when they say “Italian soup,” they undoubtedly mean minestrone.

  1. Place the meat in a large saucepan and add water. Boil the broth until the meat is tender. Then add coarsely chopped vegetables to the pan: leek, 2 carrots, 2 celery, onion, thyme. Season the broth with salt and pepper to taste.
  2. Remove the film from the broth and continue to cook for another 20 minutes.
  3. Strain the broth from the meat and vegetables.
  4. In the next cooking step, you will need onions, celery, carrots, and garlic. Cut them into medium cubes and place in a saucepan with broth to cook for 10-15 minutes.
  5. Season the broth with balsamic vinegar, tomato paste, thyme, and add the tomatoes in your own juice. Bring to a boil, then add spaghetti and cook for 5 minutes.
  6. At the end of cooking add the chopped cabbage, boil the soup and serve.
