The classic French recipe in the style of a la Monier is traditionally used for white light fish, but we suggest trying to apply this technique to salmon - frying fish in butter.

  1. Heat a frying pan over medium heat, add olive oil and place the salmon fillet skin side down.
  2. Fry without turning for 2-3 minutes, until slightly browned.
  3. Add butter to the pan, and let it brown - it's ber-noisette. "Nut oil" - when the liquid contained in the oil begins to caramelize a bit and looks like crackers.
  4. Slightly tilt the pan and intensively water the salmon with hot melted butter, which will give the fish a creamy taste and bring it to a state of readiness medium.
  5. Remove the fish and serve
  6. Serve with boiled mashed potatoes, tartar sauce, and some green leaves seasoned with lemon juice and olive oil.
