Muffins are made with banana puree and dried dates. There is no oil in this recipe, which makes the muffins light and low in calories.

Ingredients

  1. Turn on the oven to preheat to 200 degrees. Butter or line 12 muffin tins with paper baskets.
  2. In a large bowl, mix flour, baking powder, salt, allspice and sugar.
  3. In a separate bowl, beat the egg whites until fluffy white foam. In another bowl, mash bananas until pureed.
  4. Pour the banana puree into the beaten egg whites, add the dates, milk and maple syrup, stir to combine.
  5. Combine the spicy flour with the banana mixture, mix until smooth, but do not overdo it.
  6. Put the dough into prepared molds and place in a preheated oven, bake muffins with banana and dates for 20-25 minutes.
  7. Remove the muffins from the oven and let cool in the molds for 5 minutes. Remove the banana and date muffins from the molds and leave on a wire rack to cool completely.
