Muffins with blackberry and blackberry glaze

Blackberry is a tasty and healthy berry, with it pastries and desserts have a particularly festive look. Today we will prepare homemade muffins stuffed with fresh blackberries and icing based on blackberry juice and powdered sugar.

  1. Rinse the berries of ripe blackberries and dry them on a napkin or a sheet of paper towel.
  2. Prepare muffin batter. To do this, combine soft butter and sugar in a bowl.
  3. Beat the butter with sugar with a mixer for a minute, add eggs and powdered sugar.
  4. Beat everything again for a minute, pour in the milk, mix for a couple of seconds.
  5. Sift flour with baking powder and salt into a bowl with a liquid dough base.
  6. Knead the dough with a whisk or mixer at low speed.
  7. Prepare 12 muffin cups (I used silicone molds and lined them with paper capsules).
  8. 1 st. l. Divide the dough into each of the moulds.
  9. Now place one large or several medium-sized blackberries in the center of each muffin.
  10. Spread the remaining batter over the blackberries (another 1/2 tbsp per muffin).
  11. Bake the blackberry muffins in a preheated oven at 180 degrees for 25 minutes. Transfer the finished muffins to a wire rack and let them cool.
  12. To decorate the blackberry muffins, prepare the frosting. Pass the remaining blackberries through a strainer to separate the juice from the pits.
  13. Pour 1 tsp into blackberry juice. powdered sugar and knead the glaze.
  14. So add all the required amount of powdered sugar to the blackberry juice. The icing will turn out stretching, bright, tasty.
  15. Decorate the surface of the muffins with blackberry icing.
  16. The final touch is to decorate each muffin with blackberries while the frosting is still warm.
  17. Muffins with blackberry and blackberry glaze are ready. Serve these delicious and beautiful muffins for dessert.
