Turn on the oven to preheat to 180 degrees. Butter 12 muffin tins.
Pour lemon juice into a saucepan, bring to a boil. Remove the saucepan from the stove. Add dates to lemon juice, leave to cool at room temperature.
In a bowl mix flour, baking powder and salt.
In a saucepan with dates, add sugar and lemon zest, stir the sugar.
In a separate bowl, beat milk with eggs and butter. Mix this mass with dry ingredients and the contents of the saucepan. Pour batter into prepared molds, filling them 3/4 full. Place in preheated oven for 25-30 minutes until golden brown.
Remove the muffins from the oven, let cool for 5 minutes, then remove from the molds and serve.
