Turn on the oven to preheat to 200 degrees. Line 12 muffin cups with paper rosettes.
Melt the butter in a saucepan over low heat, cook for about 1 minute, until golden but not brown. Remove the saucepan from the stove.
In a bowl, mix flour, baking powder, salt, icing sugar, coconut and lime zest.
In a separate bowl, beat the egg whites until fluffy. Gradually add the flour mixture and melted butter to the proteins, mix gently.
Pour batter into prepared molds, filling them 3/4 full. Top with 1 mango slice. Place in preheated oven for 15-18 minutes until golden brown. Remove the muffins from the oven, let cool for 5 minutes, then remove from the molds and let cool completely.
