Mushrooms and zucchini on the grill, in a spicy marinade

It is not so easy to make a marinade correctly so that the vegetables cooked on the grill remain juicy, moderately salty and really tasty. According to this recipe, a versatile and rather simple marinade for mushrooms and vegetables is prepared on the basis of soy sauce with the addition of spices and lemon juice. This marinade allows you to make zucchini and mushrooms very appetizing, juicy and fragrant.

  1. Prepare mushrooms and zucchini (or zucchini) for pickling - wash and dry.
  2. Peel the garlic (you can replace the cloves with dry granulated garlic, you will need 0.5 tsp).
  3. Any oil can be used: refined sunflower, olive, rapeseed, sesame.
  4. Cut the mushrooms in half, if the mushrooms are small, leave them whole.
  5. Cut the zucchini (or zucchini) into 1 cm thick slices. If the zucchini skin is already dense, cut it off before marinating.
  6. Arrange mushrooms and zucchini in deep containers.
  7. Pass the garlic through a press and add to each container, evenly distributing.
  8. For marinade, combine soy sauce, vegetable oil, Provencal herbs and lemon juice. Stir.
  9. Pour the marinade into bowls with vegetables and mushrooms. Cover the jars with lids and refrigerate overnight (at least 2 hours). Periodically, the dishes can be shaken or stirred to distribute the marinade more evenly.
  10. Mushrooms after pickling decreased in volume, zucchini soaked in marinade. Products are ready for the grill!
  11. Spread the zucchini on the grill and fry for 15-18 minutes, 7-8 minutes on each side. Remove the fried zucchini from the grill.
  12. Mushrooms cook faster than zucchini. They need 10-12 minutes on the wire rack (5-6 minutes on each side).
  13. Arrange the vegetables and mushrooms on a serving platter and serve immediately while hot.
  14. Mushrooms and zucchini in a spicy marinade, cooked on the grill, will undoubtedly take center stage among the picnic dishes. Very tasty, juicy and spicy.
  15. Cook simply and with pleasure - the result will be appetizing!
