  1. Peel a small salad onion, cut into the thinnest half rings, add one tablespoon of wine vinegar, leave to marinate. Rinse and dry lettuce leaves.
  2. Boil the green beans in salted boiling water for about 3 minutes. Then fold into a sieve and immediately rinse with cold water to maintain color and firmness.
  3. Cook the quail eggs for 4 minutes, chill, peel and cut into quarters.
  4. Cut the cherry tomatoes into quarters.
  5. I replaced the anchovies with spiced sprat. Remove the sprat from the sprat and cut into fillets.
