Nut cake with white chocolate

Cakes for this cake are prepared with a minimum amount of flour. Ground nuts are the basis of the cake.

Ingredients

  1. Turn on the oven to preheat to 180 degrees. Oil two round heat-resistant forms with a diameter of 23 cm. Cover with parchment, grease the parchment with oil.
  2. Separate egg whites from yolks. In a bowl, beat egg yolks with sugar. Continuing to beat at low speed, add butter. Gently fold in the ground nuts, flour, vanilla and almond extracts.
  3. In a separate bowl, beat the egg whites on high speed until stiff. Gently fold the egg whites into the batter with a spatula and mix. Put the dough into two prepared forms, place in the oven and bake the walnut cake layers for 45-50 minutes.
  4. Remove the finished cakes from the oven, let cool in the molds for 10 minutes, and then remove the cakes, put on a wire rack, let cool completely.
  5. Put the cooled cakes in deep plates and make deep punctures with a skewer over the entire surface of the products.
  6. Prepare syrup. In a saucepan, mix water with sugar, bring to a boil, cook, stirring, for 20 minutes. Remove from heat, add brandy. Drizzle hot syrup over cakes, set aside.
  7. Prepare chocolate ganache. Pour the cream into a saucepan, bring to a very high temperature (almost to a boil). Place chopped white chocolate in a bowl, pour over hot cream, stir well. Place in the refrigerator to thicken, about 30 minutes, stirring occasionally.
  8. Put one cake on a serving dish, grease 1/3 of the whole ganache, cover with a second cake, grease the top and sides of the walnut cake with the remaining ganache. Sprinkle walnut cake with white chocolate.
