Oatmeal banana muffins with strawberries

Delicious and fragrant muffins from oatmeal-banana dough with strawberries. The muffins come out moist, slightly crumbly, and have a bright banana flavor, as well as a slight sourness of the berries.

  1. We prepare the ingredients according to the list for the recipe.
  2. I used finely ground oatmeal.
  3. Bananas are best taken overripe. Volume of a glass for measurement of products - 200 ml.
  4. Sift the flour into a bowl. Add coconut flakes, baking powder, oatmeal and salt to the flour. We mix.
  5. Bananas are peeled. Mash bananas with a fork until smooth.
  6. Melt the butter and pour into the bowl with the banana puree. Add sugar, eggs and milk.
  7. Blend with an immersion blender or mixer until smooth.
  8. We combine the resulting mixture with dry ingredients. Mix well.
  9. We wash the strawberries, remove the tails. Finely chop the strawberries and add to the batter. Mix again.
  10. Lubricate cupcake molds with butter or place paper liners for baking cupcakes in the cells. Fill molds 2/3 full with batter. This amount of dough makes 18 muffins.
  11. Bake the muffins in an oven preheated to 190 degrees for 25-30 minutes.
  12. Let the Strawberry Oatmeal Banana Muffins cool before serving.
