An easy-to-make oatmeal cake for those who are watching their figure or trying to limit their sugar intake.

Ingredients

  1. At the very beginning of cooking, dried apricots and prunes must first be poured with boiling water and allowed to stand for about 30 minutes, then drained.
  2. Turn on the oven and heat up to 170 degrees.
  3. Pour the milk into a bowl. Add eggs to milk.
  4. Beat with a mixer.
  5. Add sifted flour with baking powder. We mix. Let the test stand for about 10 minutes.
  6. The dough should be the consistency of pancakes.
  7. If the dough is too thick, add some water.
  8. We cover a baking sheet (the size of my baking sheet is 25x35 cm) with parchment paper and pour the dough, evenly distribute it.
  9. We send the cake to the oven for 12-15 minutes.
  10. We take out the finished cake from the oven and let it cool on the wire rack.
  11. Turn over and carefully remove the parchment paper.
  12. Cut the cake into 4 equal pieces.
  13. Let's make the cream. Let's prepare the necessary ingredients.
  14. Grind dried fruits with a food processor or blender.
  15. Add cottage cheese and sour cream.
  16. Whisk again. The cream is ready.
  17. Spread the cream on the cakes and stack them on top of each other.
  18. We remove the cake in the refrigerator for 3-4 hours.
  19. Before serving the cake, prepare the curd-berry sauce.
  20. We mix berries and cottage cheese (I took children's cottage cheese in jars). If sweetness is not enough for you, you can add some honey.
  21. Cut the oatmeal cake into portions and serve, pouring sauce on top.
  22. Enjoy your meal!
