  5. Prepare the apple sauce. Mash the yolks with mayonnaise, season to taste with salt and ground black pepper. You can add a little mustard that is not too hot.
  6. Spread some sauce over the bottoms of portioned shallow salad bowls. Divide all ingredients into segments. Place the remaining sauce in the center of the composition. Ready-made Olivier salad with apple can be garnished with finely chopped dill.
