Indulge in a mouth-watering zucchini omelet with plenty of fresh herbs. The omelet according to this recipe turns out to be not only original in appearance, but also very juicy and tender.   1. We wash the zucchini and rub it on a coarse grater. Salt, stir and leave for 10 minutes.
  2. We wash the spinach, parsley, dill and green onions well and chop finely with a knife.
  3. Break the eggs into a separate bowl and gently stir them with a whisk.
  4. Squeeze the zucchini with your hands to remove excess liquid.
  5. Put greens and zucchini in a bowl with eggs. Add sour cream, salt and black pepper.
  6. We mix.
  7. Melt the butter in a frying pan.
  8. Pour a little omelet mass (1-1.5 ladle) into the pan and, tilting the pan, distribute it evenly along the bottom to make a pancake. Let the eggs grab quite a bit, the surface should cease to be glossy.
  9. Gently, using a spatula, fold the omelet into a roll, leaving a small edge unwrapped.
  10. Then we pour into the pan the same amount of omelet mass as for the previous pancake, and let it spread and connect to the edge of the already turned roll (for this we raise it a little). We give the omelet mass to grab and continue to roll up the roll. We do this with all the omelette mass.
  11. We keep the resulting omelette roll with zucchini and herbs on the fire for another 1-2 minutes on each side so that it is browned.
  12. Cut the roll into portions with a sharp knife.
  13. An appetizing omelet roll with zucchini and herbs is ready.
