  1. Prepare all the ingredients needed to make the cottage cheese and cheese omelet rolls. From the specified number of products, 4 rolls of omelet with filling were obtained. It is better to take cottage cheese fat and soft, so the consistency of the cottage cheese filling will be more uniform.
  2. Break the eggs into a bowl, add a pinch of salt and stir well with a fork or whisk until a smooth egg mixture is obtained.
  3. Heat the sunflower oil in a skillet. Pour some egg mixture into the pan and spread over the bottom to make a thin omelet pancake.
  4. When the surface of the egg pancake has set, turn it over and fry for a few more seconds.
  5. In this way, fry a few more thin pancake omelettes from the remaining egg mixture. In total, I got 4 pancakes.
  6. Now prepare the filling. In a bowl, combine cottage cheese (it is better to take fatty soft cottage cheese, I have homemade) and hard cheese grated on a coarse grater.
  7. Add salt, black pepper and ground nutmeg.
  8. Stir cottage cheese with cheese, as if grinding them together with a spoon.
  9. Take one egg pancake and spread some of the curd and cheese filling on its surface.
  10. Roll the egg spring roll into a tight roll.
  11. Thus, form the rest of the rolls.
  12. Omelet rolls stuffed with cottage cheese and cheese are ready to serve.
