An omelet with beets is prepared in an unusual way and not only looks very appetizing, but also turns out delicious and satisfying. Beetroot omelet will especially appeal to those who love beets and try to include in their diet as many healthy foods as possible.

  1. Peel the beets and cut into strips.
  2. Transfer the beets to a dry skillet. Pour in hot water so that it almost covers the beets.
  3. Now simmer the beets over medium heat until the water has completely evaporated and the beet slices are soft and completely cooked (about 25 minutes). If the water evaporates before the beets are cooked, you can add a little more water.
  4. When the beets are ready, pour in some sunflower oil in a short time. Saute the beets lightly, about a minute.
  5. For the omelette mixture, break the eggs into a bowl, add mayonnaise and salt.
  6. Use a fork to loosen the eggs with mayonnaise and salt.
  7. Pour the prepared omelet mixture over the fried beets.
  8. Cook the omelet over low heat, covered, until eggs set.
  9. Finely chop the parsley (or any other greens of your choice).
  10. Sprinkle the finished omelet with beets and mayonnaise with chopped herbs and black pepper.
