  1. Peel and cut the onion into small cubes.
  2. Peel and cut the carrots into thin circles or semicircles (about 3 mm thick).
  3. Heat vegetable oil in a frying pan and put onions and carrots.
  4. Stir occasionally, fry the onions and carrots over medium heat for about 7-10 minutes, until soft.
  5. Combine eggs and salt in a deep bowl.
  6. Mix with a whisk.
  7. Add the egg mass to the pan to the vegetables.
  8. Reduce the heat to a minimum, cover the pan with a lid and cook the omelet for another 3-4 minutes, until the eggs are completely set.
  9. The omelet with carrots and onions is ready.
