  1. Break eggs into a bowl.
  2. Season with salt and pepper, pour in a little water.
  3. Beat eggs lightly with a fork.
  4. Preheat a frying pan, pour in vegetable oil. Pour the egg mixture into the hot oil. Reduce heat to low, cover. Cook the omelet for about 3 minutes.
  5. Meanwhile, grate the hard cheese on a coarse grater.
  6. When the eggs set, gently turn the omelette with a spatula. Sprinkle with cheese.
  7. Cover the skillet with a lid and cook the cheese omelet for about 3 minutes, until lightly golden.
  8. The omelet with cheese is ready. You can sprinkle it with herbs.
  9. Bon Appetit!
