An omelet with Chinese cabbage, bell pepper and tomato juice is a simple and delicious option for breakfast or lunch. The combination of tomato, aromatic pepper, tender cabbage and eggs gives simply amazing results!

  1. Peel the onion, rinse and dry. Cut the onion into small cubes
  2. Peel the bell pepper, rinse, dry and cut the stalk. Cut the pepper into small cubes.
  3. Rinse and dry the Chinese cabbage. Cut the cabbage into thin strips.
  4. Heat vegetable oil in a frying pan, put all prepared vegetables. Stir occasionally, fry over medium heat for about 5-6 minutes.
  5. Then pour tomato juice into the pan, reduce heat to low and stir. Simmer for about 5 minutes.
  6. Break eggs into a separate bowl.
  7. Shake eggs with a fork or whisk.
  8. Once the vegetables are soft, you can move on to the next step.
  9. Pour the beaten eggs into the skillet. Add salt and ground black pepper. Increase heat to medium and stir.
  10. Cook the omelet with vegetables over medium heat, stirring constantly with a spatula for about 4-5 minutes, until the eggs set.
  11. Transfer the finished omelet with vegetables to a plate and serve, decorate with a sprig of dill if desired. Also, if desired, it can be supplemented with fresh vegetables, pickles or slices of bread. Even just with a cup of coffee, it's amazingly good!
