A very tasty and appetizing omelet with fried potatoes, sausage and cheese is easy and quick to prepare. This omelet can be called "rich" - it combines eggs, fried ruddy potatoes, sausage and cheese. This is a wonderful hearty breakfast made from simple products!

  1. Cut the sausage into slices.
  2. Grate the cheese on a medium grater.
  3. Peel and cut the potatoes into semicircles or slices about half a centimeter thick.
  4. Break eggs into a bowl, add salt to taste.
  5. Beat the eggs with a whisk or mixer at low speed.
  6. Heat vegetable oil in a frying pan. Put the potatoes in a pan in one layer.
  7. Fry potatoes over medium heat until golden brown, about 2-3 minutes. Then turn over to the other side and fry the potatoes for about 1 minute. Salt the potatoes lightly.
  8. Then reduce heat to low and fill with beaten eggs.
  9. Put sausage circles on top.
  10. Sprinkle with grated cheese on top.
  11. Cover the pan with a lid. We continue to cook the omelet on low heat for about 3-5 minutes, until the eggs are completely set.
  12. A hearty omelet with fried potatoes, sausage and cheese is ready. Sprinkle with chopped parsley if desired and serve.
