The ideal dish for a weekend breakfast is a juicy omelet with potatoes, sausage, cheese and fresh wild garlic. Such a hearty dish will provide energy until lunchtime. A delicious and hearty breakfast with wild garlic is what you need for a spring mood!

  1. Rinse the ramsons and sort them out, removing the top white leaves.
  2. Finely chop the wild garlic, setting aside 2-3 leaves for serving. Cut the boiled sausage into thin cubes.
  3. Peel and grate the potatoes on a fine or Korean carrot grater.
  4. Beat eggs into a deep bowl, add salt and black pepper. Stir with a fork, combining the whites and yolks.
  5. Add chopped sausage, wild garlic and potatoes to the eggs. Stir.
  6. Heat vegetable oil in a skillet over low heat. Pour the egg mass into a skillet, cover and cook the omelet for about 7-8 minutes.
  7. The egg mass "grabbed" and brightened - it's time to turn it over.
  8. Cover the skillet with a wide, oversized plate and flip it over so that the omelet remains on the plate (be careful not to burn yourself with the hot oil!). Then slide it back into the pan. Fry the omelet without the lid for another 2-3 minutes.
  9. Grate the cheese on a coarse grater. Finely chop the laid leaves of wild garlic with a knife.
  10. Use a plate to turn the omelet over again and sprinkle with cheese and wild garlic.
  11. Pour about 30-40 ml (4-5 tablespoons) of water around the edges of the omelet and cover the pan with a lid. Bring the heat to medium and cook the omelet for about 1 minute, during which time steam will form and the cheese will melt.
  12. Juicy omelet with potatoes, sausage, cheese and wild garlic is ready.
  13. Transfer the omelet to a plate, garnish with fresh wild garlic.
  14. Cut the omelet into portions and serve.
  15. Hearty and beautiful breakfast with a spring mood!
