A quick and simple breakfast - a bright omelet with pumpkin and herbs. Pumpkin slices not only perfectly complement the juicy omelet, but also give it a sunny color. Hearty, tasty and uncomplicated - a great start to the day!

  1. Peel the pumpkin carefully, wash and dry. Cut the pumpkin pulp into small thin strips.
  2. Break eggs into a deep bowl, add salt, pepper and paprika.
  3. Shake with a fork.
  4. Heat the pan and grease with vegetable oil. Place the pumpkin and fry on low heat for about 4-5 minutes on each side.
  5. Pour the egg mixture over the pumpkin.
  6. Rinse the parsley, dry, chop finely with a knife. Sprinkle the omelet with chopped herbs.
  7. Cover the skillet with a lid and cook the omelet for about 4 minutes.
