Omelet with zucchini and cheese

The recipe for making beaten eggs with grated zucchini (or young zucchini) and fresh soft cheese solves the problem of a quick, tasty and healthy breakfast.

  1. Beat the eggs and combine with the grated zucchini. Season with salt and pepper.
  2. Melt the butter in a skillet over medium-high heat. Add eggs and spread evenly over the bottom of the pan. Gently pry the edges of the omelet with a spatula.
  3. When the edges are lightly browned, sprinkle the omelet with crumbled cheese. Fry the omelet with cheese almost until tender (eggs should remain soft in the middle), remove from heat and leave for 1-2 minutes (the remaining heat will finish cooking).
  4. Sprinkle with pepper to taste and garnish with thyme leaves. Place the omelet from the skillet on a plate (fold in half if desired) and serve immediately.
