An appetizing omelet roll without flour and milk turns out to be very tender and juicy. A great dish for a hearty, delicious breakfast of eggs, vegetables, cheese and herbs.

  1. Wash the zucchini, dry it with a napkin, rub it on a grater.
  2. Break the chicken eggs into a bowl and shake with a fork.
  3. We squeeze the zucchini mass from excess liquid and send it to a bowl with eggs.
  4. Rub the cheese on a coarse grater. Combine a little more than half in a bowl with eggs and zucchini. Mix well.
  5. My tomato, cut into small cubes and send to a bowl.
  6. Wash the parsley and dry it with a paper towel. Chop finely and, leaving a little greens for serving, send to the egg-vegetable mixture.
  7. Finely chop the clove of garlic and add to the bowl as well.
  8. Salt and pepper to taste. Mix well. The mass for making an egg roll is ready.
  9. Preheat a non-stick frying pan and grease with vegetable oil. Pour part of the egg mass with a ladle so that it turns out a pancake, and fry for three minutes over medium heat.
  10. When the omelet grasps and is free to lift with a spatula, we begin to roll it up. Let's fold the part and move it to the edge of the pan, from where the roll began to be rolled.
  11. If the pan is non-stick, it will be very easy to fold the roll.
  12. Grease the vacated space in the pan with vegetable oil. Pour in the egg mass and continue to fry. When the new part of the omelet is fried, roll up the roll again, grease the vacant space with oil and pour in a little egg mass. We do this until the omelet mixture ends.
  13. Sprinkle the formed roll with the remaining cheese and chopped parsley. Cover with a lid, reduce the heat slightly and wait for the cheese to melt.
  14. Egg roll-omelet with zucchini, cheese, tomatoes and herbs is ready. We transfer it to a plate.
  15. Cut the omelette roll into slices and serve.
