A truly summer-tasting dish that can be a great breakfast, lunch or even dinner - an omelet with zucchini, spinach and green onions. Simple and tasty food that is not difficult to prepare.

  1. Cut the green onion into rings. Set aside about a tablespoon to sprinkle on the finished dish.
  2. Cut the courgette into cubes.
  3. Heat vegetable oil in a frying pan, add zucchini and green onions. Stir and fry over medium heat for about 2 minutes.
  4. Rinse the spinach leaves well. If the leaves are large, tear them into 2-3 parts, small ones can be left intact.
  5. Add spinach to skillet, stir and remove from heat.
  6. Break the eggs into a deep bowl, add salt and mix with a fork until smooth.
  7. Pour eggs with vegetables with spinach. Return the pan to the stove, cover and cook over low heat for 4-5 minutes, until the egg mass hardens.
  8. Delicate omelet with zucchini, spinach and herbs is ready. Sprinkle with the remaining green onions and serve.
