  1. Beat the yolks and sugar into a lush light foam.
  2. Add the juice of half an orange and mix gently with a spoon.
  3. Pour the milk into the pan. On a fine grater grate orange peel. Remove only the top colored layer of skin. Add the zest to the milk and place the pan on the stove.
  4. Bring the milk to a warm state. Pour the beaten yolks into it with a thin stream, stirring constantly with a whisk. Heat until the mass begins to thicken. Do not bring to a boil, otherwise, the yolks may curl.
  5. Remove from the heat and allow to cool. When the workpiece is completely cooled, pour it into a mold and put it in the freezer for 7-8 hours. To make homemade orange ice cream without cream smooth and airier in structure, we regularly remove it for the first 3 hours and beat it with a blender or mix it with a spoon.
