Paella is a famous Spanish rice dish with seafood, vegetables, chicken and, of course, olive oil. There are many recipes for its preparation. I offer my own version of paella with mussels, vegetables and corn. It turned out very tasty and healthy.

  1. Pre-defrost mussel meat at room temperature. Rinse the rice thoroughly in running water, put in a sieve so that all the water is glass.
  2. Peel the onion and garlic, wash, dry with a paper towel, finely chop.
  3. Peel, wash, dry and cut the carrots into small cubes.
  4. Wash sweet peppers, remove seeds and partitions, cut into small cubes.
  5. Heat olive oil in a frying pan, add onion and garlic and fry for 2 minutes, stirring occasionally.
  6. Add carrots and continue to fry for another 5-7 minutes.
  7. Put the mussel meat in a saucepan with hot water. Bring to a boil, turn off the heat. Place the mussels in a colander.
  8. Pour spices into a pan with vegetables and heat for 1 minute.
  9. Put rice in a frying pan, stir and fry in oil for 5-8 minutes. The rice should be well saturated with oil.
  10. Pour 3.5 cups boiling water into a frying pan, season with salt. Cover the pan with a lid and simmer rice with vegetables over low heat until the water is completely absorbed. Adjust the amount of water as you like, as different types of rice require different amounts of water.
  11. Add boiled mussel meat, canned corn (without liquid) and sweet red pepper to a frying pan with rice and vegetables, mix. Simmer covered for 5 minutes and turn off heat. Let the paella sit for 5-10 minutes.
  12. A tasty and healthy dish is ready. Divide the paella into portions and serve. Bon Appetit!
