Paella with squid is one of the varieties of a traditional Spanish hot dish that can be prepared from several types of meat, fish, as well as poultry and seafood. We decided to stop at the "solo" version, which also takes place.   1. Prepare squid carcasses for paella. Cut them into rings and place in a bowl. Sprinkle with salt and black pepper and stir. Close the lid and leave until use.
  2. Chop vegetables
  3. Chop the onion and garlic for the paella. Cut the bell pepper in half, remove the stalk with seeds, chop the pulp finely. Cut the tomato into small cubes.
  4. Saute the onions and bell peppers
  5. Place a paella skillet (or a large, flat skillet with a thick bottom) over high heat. Pour in olive oil and heat it up. Then reduce the heat and, while stirring, fry the onions, garlic and bell peppers for 3 minutes.
  6. Add the tomato and stir. Simmer for 3 minutes. Add paella rice and fry with constant stirring for 5-6 minutes. Pour in the sherry and bring to a boil over high heat.
  7. Add squid
  8. Place the squid along with all the spices. Stir and pour in the hot broth. Bring to a boil and reduce heat to low. Cook the paella for 25 minutes until the rice is soft.
  9. Let the paella cool down
  10. When the paella is done, increase the heat to high and cook for another 1 minute. Remove the squid paella from heat and let cool slightly. Try it and, if necessary, add a little more salt.
  11. Add cherry tomatoes
  12. Wash the cherry tomatoes, dry and cut into halves or quarters.
