Pancake cake with strawberries and cottage cheese

Let's try making a pancake cake! Very beautiful pancake cake with cottage cheese and strawberries!

  1. Let's start with the pancakes. Everything is as usual, only add baking powder to the pancake dough according to the recipe.
  2. Break eggs into a bowl, add sugar and beat with a mixer or whisk, which is at hand.
  3. Add a third of milk, mix. Add flour, baking powder. Let's mix.
  4. Add the remaining milk and vegetable oil. Mix everything again.
  5. Let the finished pancake dough rest for 10 minutes.
  6. Let's bake thin pancakes on your favorite pancake pan or on an electric pancake maker.
  7. Dealt with pancakes. Now we will prepare the first filling - strawberry. I used frozen strawberries, strawberry jelly (bought at the supermarket - large selection) and powdered sugar.
  8. We will send the strawberries to the ladle, add powdered sugar and warm over low heat.
  9. Add strawberry jelly to hot strawberries and grind everything with an immersion blender.
  10. Let the finished strawberry mass cool at room temperature.
  11. The second filling is almost classic for pancakes - cottage cheese.
  12. We beat cottage cheese, vanilla sugar and powdered sugar with a submersible blender until a homogeneous (creamy) consistency.
  13. Now that everything is ready, let's assemble the layers-cakes, like a regular cake. We will smear the first pancake with curd filling, 1-2 mm thick.
  14. The second layer is a pancake with strawberry filling. And so, spreading, we alternate all the layers of the pancake cake. Leave the top pancake without filling.
  15. We send the assembled pancake cake with cottage cheese and strawberries to the refrigerator for at least 1 hour.
  16. Let's get the pancake cake out of the fridge.
  17. Prepare white chocolate and cream for chocolate icing.
  18. Melt white chocolate with cream in a water bath.
  19. Cover the pancake cake with chocolate icing. Spread the frosting well while the chocolate is hot.
  20. Decorate a pancake cake with strawberries and cottage cheese with waffle flowers. In summer, you can use fresh strawberries for decoration.
