Pancake envelopes stuffed with sausage, boiled eggs and cheese are a great option for a super nutritious snack! In addition to the hearty filling, the pancakes have an appetizing crust thanks to the egg-rusk breading and subsequent frying.

  1. It is best to get the milk out of the refrigerator beforehand.
  2. Make pancakes.
  3. Pour milk into a deep bowl, beat in an egg, pour in vegetable oil, add salt and sugar.
  4. Mix thoroughly until smooth.
  5. Add flour in portions, stirring each time.
  6. The pancake dough should turn out to be homogeneous, without lumps and drip from the spoon or whisk in a thin stream.
  7. Grease a frying pan with a small amount of vegetable oil (1 tablespoon) and heat well over high heat. Pour about a ladle of dough into the pan and distribute it evenly over the bottom, gently tilting the pan to the sides - let the batter spread evenly to form a thin pancake.
  8. Fry the pancake over high heat for about 1-2 minutes on each side, until golden brown.
  9. Fry all the pancakes this way.
  10. I got 6 pieces.
  11. Prepare the filling.
  12. Eggs (3 pcs.) Put in a saucepan, cover with water, put on heat and bring to a boil. Reduce heat to medium and simmer for about 8 minutes. Then cool the eggs in cold water.
  13. Peel the boiled eggs and cut into slices. Eggs can be boiled in advance, or you can boil them in parallel with toasting pancakes.
  14. Grate the cheese on a fine grater.
  15. Cut the boiled sausage into thin slices. The number of sausage slices should match the number of pancakes.
  16. Form envelopes. Place a slice of sausage over the center of the pancake.
  17. Place two egg circles on the sausage.
  18. Place about 1/6 of the grated cheese on the eggs.
  19. Roll the pancake into an envelope so that the filling is covered on all sides.
  20. Form the rest of the pancake envelopes in the same way.
  21. For breading, break 2 eggs into one bowl and shake with a fork. Place the breadcrumbs in another bowl.
  22. Dip the pancake envelopes first in the egg mixture, then roll in breadcrumbs.
  23. Heat vegetable oil in a skillet over medium heat. Place the breaded pancake envelopes in the skillet.
  24. Fry the spring rolls over medium heat, about 2 minutes on each side, until golden brown.
  25. Delicious pancake envelopes stuffed with sausage, cheese and boiled eggs are ready.
  26. Serve the breaded stuffed pancakes hot (after cooling, they can be heated in the microwave, they will be just as tasty).
