We offer a completely different recipe - Finnish lazy pancakes or, as they are called, Pannukkaku (Pannukakku). The main difference between these pancakes is that you do not need to cook them individually. These pancakes are baked in the oven.

This is a great idea for a family breakfast or tea dessert. The cooking process is as simple as possible. And many options for fillings allow everyone to enjoy their favorite flavors at any time of year.

  1. In a deep bowl with a mixer, mix eggs, sugar, salt, and 250 ml of milk.
  2. Then gradually add all the flour and beat until smooth.
  3. Next, pour all the milk and melted butter into the almost ready pancake batter.
  4. Then add the grated orange peel (can be replaced with lemon if desired) and mix well again. You will get a fragrant pancake batter.
  5. Turn on the preheated oven to 200 degrees.
  6. A standard oven sheet is suitable for baking. To make the pancake easy to remove, we recommend using a silicone baking mat, but you can also use ordinary parchment.
  7. Pour the dough on a sheet and place it in a preheated oven for 25-35 minutes. The pancake should be brown.
  8. Note: During the baking process, the dough will rise and unevenness will form, but when you take the pancake out of the oven, it will settle a bit.
  9. There are several ways to serve lazy pancakes.
  10. First: just cut the pancake into eight equal rectangles. Decorate the top with any berries and fruits: strawberries, raspberries, blueberries, and cherries. You can sprinkle with powdered sugar, add cheese, or whipped cream.
  11. The second way of serving is more interesting. The pancake should be cut into two parts. Put pieces of fruit on each: bananas, kiwi, apples, pears, then roll into a roll and cut into small pieces. Do not worry until the pancake has cooled, it will not break and wrap very easily.
  12. Place Pannukkaku on a plate, add a scoop of your favorite ice cream, invite loved ones to the table and enjoy a wonderful dessert.
  13. Tip: If desired, you can replace the fruit with your favorite jams, cream cheese, or chocolate paste.
