Pears are a wonderful seasonal fruit. They are useful, low in calories and, despite the increased sweetness, they can be used even by people with diabetes. A huge plus for cooking - a variety of varieties of pears, many of which are stored almost all year round, without losing flavor.

  1. Bake a pie with pear and cinnamon will be in a form with a diameter of 24 cm. If you have a different form, reduce or increase the number of ingredients.
  2. If you do not have almond flour - do not worry. You can cook at home from ordinary flour. Yes, the taste will be a little different, but believe me, the result will be unsurpassed. The combination of lemon cream and pear filling will impress you with its tenderness and originality of taste.
  3. Pour the flour on the work surface with a slide and make indentations in it. Put the almond flour, softened butter, sugar, 3 egg yolks, and a pinch of salt in it. Quickly knead the dough with your hands, then roll it out with a rolling pin.
  4. Grease the form with butter and sprinkle with flour, then line with dough. Pierce the dough in several places with a fork and put the form in the refrigerator.
  5. Let's prepare the cream. Melt the butter in a saucepan and allow it to cool slightly. Then add sugar and mix with a whisk.
  6. Stirring constantly, add eggs, starch, chopped zest of 2 lemons, and the juice of one of them.
  7. Put the pan on low heat and, stirring constantly, bring to a boil. Remove from the heat and cool the cream (you can put the pan in ice water).
  8. When the cream has cooled a bit and become warm, pour it into a mold. Arrange the pears in a semicircle on top of the cream, and sprinkle with cinnamon.
  9. Bake in the oven for 35 minutes. Check the readiness with a toothpick: pierce - if there are no pieces of dough left on the toothpick, the pear cake is ready.
  10. Tip: if the surface of the cake starts to burn, cover the form with a sheet of foil.
  11. After removing the cake from the oven, cover it with a waffle towel and let stand for 10-15 minutes. You can then cut. Standard slicing - 8 servings.
  12. Pear pie is best served with white wine at room temperature or a scoop of ice cream. Bon appetit!
