  1. 1 Rinse the lemons, rinse with boiling water and remove a thin layer of zest (no white pulp!). Rinse the pearl barley under running water.
  2. 2 Put the pearl barley together with the zest in a saucepan, add water, bring to a boil and cook over low heat for one and a half to two hours.
  3. 3 Thoroughly strain the finished broth and squeeze the thick out thoroughly. Then add sugar (more than in the recipe - this is to taste) and leave to cool.
  4. 4 Squeeze the juice from the remaining pulp of the lemons and add it to the cooled broth.
  5. 5 Serve with ice and mint leaves.
