  1. Separate the whites from the yolks. This is easier to do when the eggs are cold. The temperature for whipping egg whites should be slightly below room temperature (about 15 degrees). Wait an hour and a half until the proteins are heated (you can, in principle, speed up the process by placing the dishes with the proteins in tepid water, stirring them periodically and checking the temperature).
  2. Place a rack in the bottom third of the oven. Preheat oven to 160 degrees. Prepare a cake tin with a hole in the middle (28 cm diameter and preferably with a removable bottom).
  3. Mix the sifted flour with ½ cup sugar and salt. Add lemon juice to the egg whites and start beating them (this, of course, is best done with a stand mixer). Beat on low speed for 1-2 minutes. Increase the speed to medium, and gradually, 1 tbsp. l., slowly, add sugar (1 cup). Beat egg whites for another 6-7 minutes. They should be voluminous, light and hold their shape. But do not beat them to a dense white mass. At the last minute, add vanilla extract.
  4. Dust the beaten egg whites with about a fifth of the flour. Stir gently and slowly with a wooden spoon or spatula. Add and mix the flour in four more portions.
  5. Carefully pour the dough into the mold. Lightly level the surface with a spatula (if needed). Bake the cake until light golden brown (45-55 minutes). The finished cake should be like a soft sponge and “springy” when pressed lightly. Let the cake cool before taking it out of the mold.
  6. While cake is baking, toss strawberries with sugar and liqueur (if desired). Place the berries in the refrigerator for an hour (you can prepare the strawberries in advance).
  7. Cut the "angel pie" with a saw blade. Serve it with strawberries and whipped cream. Enjoy!
