Pie with marzipan and dried fruits

Even the most demanding gourmets will surely appreciate this festive marzipan cake.

  1. Turn on the oven to preheat to 170 degrees. Line a 20cm springform pan with parchment paper.
  2. Place cranberries, cherries, whole raisins, citrus zest, sugar, butter and citrus juice in a small saucepan. Place the saucepan over medium heat, bring the mixture to a boil, reduce the heat to low, and cook for about 10 minutes. Pour the contents of the saucepan into a large bowl and let cool to room temperature.
  3. Add eggs and pistachios to the cooled butter mixture, mix. Add flour, baking powder and spices to this liquid mass, mix well.
  4. Divide the marzipan into 11 equal pieces and shape them into balls. Put half of the dough into the prepared form, and put marzipan balls on it, but so that they do not touch the sides of the form. Top with the remaining dough.
  5. Put the mold in the preheated oven and bake the cake for about 1 hour, until a clean wooden stick. Then take the marzipan pie out of the oven and let it cool right in the mold.
  6. Prepare frosting. Melt the jam in a saucepan. Form a ball from marzipan, and then roll it into a circle with a diameter equal to the diameter of the pie. Release the cooled marzipan pie from the mold, put it on a dish, grease with warm apricot jam on top and put a circle of marzipan on it. Decorate the marzipan cake as you wish.
