Great recipe! Pie "Zebra" turns out to be airy, the taste is amazing!

Ingredients

Directions

  1. We send a pinch of salt to the proteins and beat for a couple of minutes so that the protein threads stretch. Whisk at slow speed.
  2. While the whites are whipping, add 70 g of sugar to the yolks and grind.
  3. We also send vanilla sugar here.
  4. Now add water, mix well. We add vegetable oil.
  5. We send the remaining sugar to the protein, increase the speed and beat until stiff peaks.
  6. Let's take a dry mixture: combine flour, starch and baking powder. Everything needs to be screened.
  7. Protein whipped perfectly, a real cloud!
  8. Let's start putting everything together. Pour the dry mixture into the yolks and mix well.
  9. As soon as the mass has become uniform, add proteins.
  10. And gently, folding movements, mix.
  11. Add cocoa to 1/3 of the dough and mix.
  12. Put the dough into the prepared form with a diameter of 21 cm. We put two tablespoons of dark dough on three tablespoons of light dough. And so we alternate until the dough is finished.
  13. To make the Zebra cake more elegant, we apply patterns with a wooden stick, drawing from the edges of the mold to the center.
  14. Bake at 160 degrees for about 1 hour. Check readiness with a dry stick.
  15. Cool the zebra pie upside down on a wire rack.
  16. Carefully separate the biscuit from the walls of the mold with a knife.
  17. Amazing Zebra Pie! Gentle, airy! Holds its shape well and quickly recovers after being pressed.
