  5. Cover with the second pita bread.
  6. Close the pan with a lid and simmer over low heat until the eggs set. Then, using a wide spatula, gently turn our pizza over to the other side. Sprinkle with cheese and simmer again for a couple of minutes under the lid until the cheese melts.
